str_vignevin_05='After the encuvage in whole bunches, the carbonic maceration will allow an extraction of the fruits, of the color and of all of the phenolic compounds of the wine. Successive reassemblies allow a good homogeneity of the tank as well as the oxygenation of the fermenting yeasts. At the end of a few days, the vintage is pressed and alcoholic fermentation ends. A second natural process of fermentation takes place with the transformation of the malic acid into lactic acid. One speaks about malolactic fermentation which allows a natural deacidification of the wines';
